Soak the idli or dosa rice with fenugreek seeds, and soak gota udad seperately overnight.Then grind both of them by adding washed poha with 1 tbsp sugar,just add very little water while grinding. Make sure to keep it in a warm place for fermentation to take place for atleast 5-6 hours.Your batter can now be used to prepare idli,dosa or uttapam.
Direction to make Uttapam
Add thick batter in a bowl,add little salt accordingly for making uttapam let it be in thick consistency.Spread the batter on a dosa tava,chop onions, tomatoes and capsicum for the toppings, add little oil and let it get crisp and golden brown on both sides.Garnish it with cheese.Serve it with tomato ketchup, sambhar or chutney.
Direction for Chilli Cheese Garlic Dosa
Pour the batter into a bowl add salt accordingly, add little water to make it liquidy.Spread a thin layer on hot tawa,spread little oil around the edges,later spread a little amount of butter, let it get crisp on a medium flame.Finely add cut few green chillies, sliced garlic and cheese. Enjoy it with sambhar and chutney.
