Pani puri or puchka is one of the popular street food of India.This recipe has a touch of Kolkata style Pani Puri.Kolkata Style Puchkas also known as Pani Puri and Golgappa is a simple and delicious recipe to try at home.It is most of the time considered a digestive snack.Did you know it was first made and eaten (or rather, gulped) in Magadha, which is present day South Bihar. The snack is known as ‘phoolki’ in Bihar.Pani Puri known by various names like golgappa,puchka,pakodi, gup chup, paani ke patashe though the name differ in various parts of the country but the love for the food remains the same.Never feel guilty of having pani puri it can cure your mouth ulcer!
¼cupSprouted Moong (boiled in salt and tumeric water)
¼cupRed Chana(boiled in salt and tumeric water)
2tbspFresh Green Coriander (finely chopped)
½tspCumin Powder
½tspChaat Masala
1tspMuri Masala
1tspKashmiri Red Chilli Powder
½tspSalt
1tspLemon Juice
for serving

Instructions

Step 1
In a small blender take ¼ cup mint, ½ cup coriander, 1/2 inch ginger, 2 green chillies,1/2 tsp chaat masala 1/2 tsp cumin powder,1/4 tsp salt,1/2 tsp black salt, & 1/2 tsp muri masala.
Step 2
Blend it into a smooth paste by adding little water if required just like chutney or sauce like consistency.
Step 3
Transfer theeka pani paste into a large bowl.
Step 4
Add fresh lemon juice of 2(1/2) full size lemons, and 3 cup cold water mix well.If paste is not smooth then juice strain the theeka pani mixture before use.
Step 5
Serve theeka pani with boondi & chopped fresh coriander to enjoy with puchka.
khatta meetha pani preparation
Step 1
In a large bowl add 3-4 tbsp jaggery and 2 cups of water.
Step 2
Microwave it for 60 seconds allow the jaggery to melt completely in water.Allow it to cool.
