Mumbai Vada Pav
A popular Indian street food recipe prepared mainly with pav bread and deep fried potato dumpling in lightly toasted buns and served with spicy garlic chutneys.. This is so famous in Mumbai the capital city of the Indian state of Maharashtra, so much so that Mumbai is almost synonymous to Vada Pav.
Ingredients
- 6 Ladi Pavs or Small Burger Bread (small squares of white bread)
- 7-8 Boiled Potatoes (medium)
- 1/2 cup Fresh Coriander (chopped)
- 2 tbsp Ginger,Garlic & Green Chilli Paste
- 1/4 tsp Turmeric Powder
- 1 tsp Mustard Seeds
- 7-8 Curry Leaves
- 1 tbsp Garam Masala
- Salt to Taste
- 1 pinch Aesofatida
- Oil for Deep Fry
Ginger Garlic Green Chilli Paste
- 15-20 Cloves of Garlic (medium)
- 4 Green Chillies
- 3 inch Ginger (roughly chopped)
Grind above ingredients into a paste
For the Green Chutney
- 10 Cloves Garlic (medium)
- 1 inch Ginger
- 1 cup Coriander Leaves (chopped)
- 1/2 cup Roasted Chana
- 1 Green Chilli
- 1 Lemon Juice
- Salt to Taste
- 4 tbsp Water
Grind to a fine paste
For the batter
- 1/2 cup Besan (bengal gram flour)
- 1 tbsp Red Chilli Powder
- 1/2 tsp Cumin Powder
- Salt to Taste
Accordingly add water to make a thick batter.
Instructions
Step 1
- In a kadai add 2 tbsp oil, mustard seeds, curry leaves let it crackle then add ginger garlic green chilli paste saute it for a while on medium heat. Add a pinch of aesofatida, turmeric, garam masala & salt accordingly.Add chopped coriander and mashed potatoes to it and mix well.Let it cool then divide into balls.
Step 2
- Dip the potato balls into the thick batter and deep fry till crispy golden brown.Keep it aside.Take a non-stick tawa or a pan slice each pav into half, spread butter on both sides of the bread and let it get crispy golden brown, now apply green chutney on one side.Place one vada or fried potato ball between the bread just like a burger.If you like it bit spicy you can add fried green chilli and serve hot with green chutney.
