Sprouted Moong Salad

This salad is full of nutrition helps in digestion due to its fibrous nature and also lowers the cholesterol. Many people ask can sprouts be eaten at night but for sprouted moong beans I will say yes this salad can be eaten at night. Now best way to sprout the moong beans is to sort them well in order to remove stones, wash thoroughly and then soak in water for atleast 7-8 hours. Drain the water in which moong beans are soaked and wash it once again then finally drain the water.Take a moist muslin cloth and place the soaked moong beans, wrap the cloth for 10-12 hours till you see the sprouts coming out of the cloth.Sprinkle water over the tied muslin cloth frequently if the cloth becomes dry.Short shoots will develop in moong beans which means they are ready to use for the salad.

Ingredients
  

  • 1 cup Whole Moong (sprouted)
  • 1 Cucumber (chopped)
  • 1 Tomato (chopped)
  • 1 Onion (chopped)
  • ¼ cup Fresh Coriander (chopped)
  • Sev for Garnish (An Indian snack consisting of long, thin strands of gram flour, deep-fried and spiced)

for the sweet and spicy yogurt

  • 1 cup Yogurt (beaten)
  • ½ tsp Red Chilli Powder
  • ½ tsp Cumin Powder
  • ½ tsp Salt
  • 1 tsp Sugar

Whisk yogurt along with the ingredients properly

Instructions
 

Step 1

  • In boiling water add little salt and turmeric then add the sprouted moong let it par-boil for 5 minutes.Strain it under cold water and keep aside.

Step 2

  • In a bowl add sprouted boiled moong add chopped cucumber, tomatoes, onions and coriander mix well.

Step 3

  • Add a big spoonful of sweet and spicy yogurt on top of it.Garnish it with sev serve cold.
