Pasta and Couscous Salad
Durum wheat semolina crushed and formed into small granules or sphere forms couscous.It is good to stock in the kitchen shelve as an easy and fast alternative for rice,quinoa, and noodles.There are numerous benefit of having couscous it gives an extra boost of fiber, protein, and micronutrients like iron, manganese, and magnesium.This pasta salad can help you to boost your immunity and you can include it in your 14 day diet program.
Ingredients
- 1 full Cucumber (peeled)
- 1 Red Onion (finely sliced)
- 1 Tomato (sliced)
- 1 cup red, yellow & green bell pepper (diced)
- 5 slices jalapenos (chopped)
- 4 black olives (sliced)
- 1 cup tri-colour pasta (boiled)
- 1 cup tri-colour couscous (boiled)
for the dressing
- ½ cup Olive Oil
- 2 tbsp Honey
- 1 Lemon Juice
- 2 tbsp Mustard Mayonnaise (try using 78% fat-free)
- 3 tbsp Garlic Mayonnaise (try using 78% fat-free)
- 5 cloves Garlic Grated
- ½ tsp Red Chilli Flakes
- 1 tsp Sage (dried)
- 1 tsp Garlic Bread Seasoning
- ½ tsp Black Pepper Powder
- 1 tsp Salt
(close the lid and keep for 10minutes) then shake well till everything is mixed properly.Also note this dressing can be stored in fridge for a week.
Instructions
Step 1
- In a big bowl add boiled pasta, couscous, green, red, yellow bell peppers, red onion, peeled cucumber, jalapeno, olives, tomatoes and toss properly.
Step 2
- Drizzle a good amount of the dressing on top. toss the salad properly and sprinkle dried parsley on top.Serve chilled.
