Vegetable Biryani
Vegetable Biryani is an aromatic rice dish made with basmati or long rice,mix vegetables & biryani spices.Veg biryani instant pot dish with celebration of exotic flavors,vibrant colors and pleasing aromas infused into a pot of goodness.A good Biryani should have separate but fully cooked long rice grains as it is the main ingredient one can use basmati or other good long rice.Most of the time biryani is considered to be unhealthy answer can be yes or no,depends who is eating it.Briyani was originated from Persia and was bought to India by the Mughals.The word Biryani is derived from the Persian word Birian, which means ‘fried before cooking’ and Birinj, the Persian word for rice.Biryani was further developed in the Mughal royal kitchen.It is believed that when Mumtaz Mahal visited the army barracks, she found that the Mughal soldiers looked undernourished. In order to provide a balanced diet to the soldiers, she asked the chefs to prepare dish with meat and rice.Though Biryani is made with meat but when cooked with vegetables it taste delicious.Vegetable biryani is often served with raita made with whipped curd to balance it spiciness.
Ingredients
- 1 cup Basmati Rice
- 4 cup Water
- 1 tsp Salt (to cook rice)
- ½ pcs Lemon (juice)
- 3 tsp Clarified Butter or Ghee
- 1 cup Carrots (cubed)
- 1 cup French Beans (½ inch sized)
- ½ cup Green Peas
- 1 cup Green Capsicum (diced)
- ½ cup Onions (thinly sliced)
- ½ cup Potatoes (cut into halves)
Spices
- 1 tsp Garlic Paste
- 2 tsp Ginger-Green Chilli Paste
- 1 tsp Coriander Powder
- ½ tsp Red Chilli Powder
- ½ tsp Turmeric Powder
- ½ tsp Kasoori Methi
- 1 tsp Sabji Masala
- 1 tsp Salt to Taste
For Dahi Raita
- 3 cup Curd
- 1 cup Cucumber (chopped)
- ½ cup Onions (finely chopped)
- ½ cup Fresh Coriander Leaves (finely chopped)
- 1 tsp Red Chilli Powder
- 2 tsp Powdered Sugar
- Salt to Taste
Instructions
Cooked Rice
Step 1
- If cooking your rice in a pot, use a deep bottomed pan and add 4 cups water.Let water boil on a medium flame.
Step 2
- When the water is hot, add 1 teaspoon salt.Now boil it on high flame.
Step 3
- Now it is time to add the rice for your veg biryani to the salty water in the pot.Add lemon juice to keep rice white and not become yellowish.
Step 4
- The rice should not be fully cooked, but a bit undercooked or about 75% or ¾ of the way cooked.
for Biryani
Step 1
- Heat a pan on a medium flame,add ghee and allow it to melt then add sliced onions.Saute it for while.
Step 2
- Add boiled vegetables carrots,french bean & peas.Then add small diced capsicum and saute it for sometime so that vegetable are greased properly with ghee.
Step 3
- Add garlic paste followed by ginger and green chilli paste and all the dry spices one by one.
Step 4
- Mix everything gently without smashing the boiled vegetables.
Step 5
- Add fried halve potatoes,cooked basmati rice and mix everthing well.Add fried brown onions to enhance the briyani flavour.
Step 6
- Garnish it with fresh coriander.
Step 7
- Serve hot with chilled cucumber & onion raita.
For Dahi Raita
Step 1
- Take a serving bowl add curd to it.Then add red chilli powder,salt & sugar.Mix everything well.
Step 2
- Add chopped cucumber & onions.Garnish it with fresh coriander and freeze it for 1 to 2 hrs before serving.
