Spicy White Bean Rice

Spicy white bean rice is one of the Gujarati rice dish prepared with various aromatic roasted spices with goodness of white beans which are a nutritional powerhouse, as they're packed with fiber and protein and a good source of numerous micro nutrients, including folate, magnesium, and vitamin B6.This dish is an excellent choice for dinner parties,very easy to make and all the ingredients are easily available at the local grocery store.This rice can be eaten with vegetarian goanese curry which uses the same gravy paste and is a good combo for the dish.

Ingredients
  

  • 1 cup Basamati Rice (soaked in water for ½ an hour)
  • ½ cup White Beans/Lobia Beans (soaked in water overnight)
  • 1 tsp Cooking Oil (any vegetable oil)
  • ½ tsp Mustard Seeds
  • Salt to taste

For Spices Paste

  • 1 tsp Khus Khus (soaked in water)
  • 4 pcs Dry Kashmiri Red Chillies (not too hot ones)
  • 3 tbsp Dry Desiccated Coconut
  • 1 tbsp Dry Whole Coriander Seeds
  • 1 tbsp Black Peppercone
  • 6 pcs Cloves
  • 1 inch Cinnamon Stick
  • ½ tsp Red Chilli Powder
  • ½ tsp Tumeric Powder

For Desi Tadaka

  • 1 big Potato (diced into small cubes)
  • 1 big Red Onion (diced into small cubes)
  • 1 tbsp Ghee

Instructions
 

Step 1

  • Roast all the dry spices for the white bean rice paste in a pan on a medium flame, let it cool down and grind it into a smooth paste with little water and keep it aside.

Step 2

  • Now in a pressure cooker add overnight soaked white beans with 1 cup water add salt for taste and ½ tsp turmeric,let is cook till 5 whistle and keep it aside.

Step 3

  • Next take a pan add 1 tsp cooking or vegetable oil add mustard seeds till it splutters add soaked basamati rice and sauté it for sometime add one and half cup of water into the pan and salt to taste,once water start to boil add cooked white beans and grinded paste mix once. Now put the pan lid over the pan,let the rice cook on a slow flame for around 15minutes then turn down the flame.

Step 4

  • We prepare for tadaka in a small pan add little ghee put the diced potatoes till it turn golden brown now add diced onion till it gets soften,put it on top of the done rice. Spicy white bean rice is ready to be served.

Notes

If you don’t want the rice to be too spicy please use kashmiri dry chillies not too hot red chillies.
