Dhaba Style Dal Fry and Vegetable

Ingredients
Dhaba Style Vegetable Ingredients
- 1 bowl par-boiled vegetables(carrots, potatoes, green peas, french beans, and cauliflower)
- 1 cup Tomato Puree (4-5 medium)
- 1 cup Onion (3medium) , Ginger(1 inch), and Garlic(6-7 cloves) paste
- 1 tsp Cooking Oil
- ½ tsp Ghee/Clarified Butter
- ¼ tsp Turmeric Powder
- 1 tsp Red Chilli Powder
- 1 tbsp Coriander Powder
- 1 tsp Cumin Powder
- 1 tbsp Kitchen King Masala (available in any local supermarket)
- Salt to taste
Dhaba Style Dal Fry Ingredients
- 1 bowl Arhar or Toor dal/pigeon pea dal (pressure cooked) do not whisk.
- 1 tsp Oil
- 1 tsp Ghee
- 1 Bay Leaf
- 1 Dry Red Chilli
- ½ tsp Cumin Seeds
- 2-3 cloves Chopped Garlic
- 2 tbsp Dhaba Style Vegetable Gravy Paste (mentioned in dhaba style vegetable recipe)
- 1 pinch Kitchen King Masala
- ¼ tsp Red Chilli Powder
Instructions
Method for Dhaba Style Vegetable
Step 1
- In a pan add oil and ghee, followed by onion, ginger, and garlic paste.Let it saute on medium flame till the raw smell of onion and garlic goes away.
Step 2
- Add the tomato puree followed by the spices turmeric, red chilli powder, coriander, cumin powder, kitchen king masala, and salt accordingly. Saute it for few minutes on medium heat, cook till the water fully evaporates and oil starts leaving the sides of the pan.
Step 3
- Keep aside two tablespoons of paste for the dhaba style dal fry to be made later in the recipe.
Step 4
- Add the par-boiled vegetables and mix well by adding very little water. Let it cook on low flame with lid on for 6-7 minutes.
Step 5
- Garnish it with freshly cut coriander and serve hot with tandoori roti recipe link given below.
Method for Dhaba Style Dal Fry
Step 1
- Heat pan add oil, cumin seeds let it splutter followed by bay leaf and dry red chilli, and the prepared paste.
Step 2
- Saute it for few minutes add the cooked dal mix well. Let it simmer on low flame for few minutes.
Step 3
- Transfer it into a serving bowl.
Step 4
- For the tadka in a hot pan add ghee chopped garlic let it turn little pink add kitchen king masala and red chilli powder and pour it over the dal.
Step 5
- Serve hot with sabzi, roti, and rice.
