Gujarati Style Urad Dal and Chawal Rotla
To make Gujarati style white urad dal which is one of the regular dishes made occasionally in the daily meal due to its high content of minerals and vitamins found in urad dal which helps to maintain healthy glowing skin and hair. This dal helps to reduce any form of skin allergies and irritation, and its high iron content circulates more oxygen in the body for radiant and clear skin. This white urad dal is relished with rice or chawal rotla which is also very healthy. Cooking this recipe is no rocket science. Urad dal or Adad ni dal in English is called split black gram and also goes by the names, dhuli dal, dhuli urad, maa ki dal, white lentils, or white urad dal.Chawal ka Rotla or Rice Roti is made from rice flour which gluten-free making it safe for people with gluten allergies or celiac disease. It is also found in studies that Rice flour, especially the brown rice flour variety, is an excellent source of fiber, which not only improves digestive health but has also been shown to reduce cholesterol levels.
Ingredients
For Urad dal
- ½ cup White Urad Dal pressure cooked
- 1 small cup Yogurt whisked
- 1 tbsp Ghee/Clarified Butter
- ½ tsp Whole Cumin/Jeera
- ¼ tsp Asafoetida
- 4-5 Garlic Clove
- 2 Green Chillies
- 2-3 Cloves
- 1 Cinnamon Stick
- Salt to Taste
For Chawal Rotla
- 2 cups Rice Flour
- ½ cup Wheat Flour
- 2 tsp Ghee/Clarified Butter melted
- 1 cup Water & Milk (mix together) lukewarm
- Salt to Taste
Instructions
For Urad Dal
Step 1
- Heat a pan add ghee, asafoetida, cumin let it splutter for a while.Add cloves and cinnamon stick
Step 2
- Add the pressure cooked dal and stir to make sure it doesn't stick to the pan.
Step 3
- Add a little water and keep stirring.Add spoonful of green chillies and garlic paste.Whisk yogurt in a small bowl and add to the dal.Give it a final stir.
Step 4
- Add salt as per taste.Allow it to simmer on low flame for about 5 – 10 minutes over a slow flame and serve hot with chawla rotla.
For Chawal Rotla
Step 1
- In a bowl mix all the above ingredients and knead a soft dough.Rest the dough for good 10 -15 minutes for a easy roll.
Step 2
- Take a golf ball size dough dust little rice flour, tap the dough with your hand on a board until it becomes round in shape.Preheat the tawa on a medium flame, and cook the rotla on one side till light brown.Now hold the light brown coloured rotla with a long kitchen tong keep it directly on medium flame till it looks crispy.Make sure it is not kept for longer time else it will get burnt.Apply generously amount of ghee or butter when hot.
