Sometime we just feel why to make a kadhi which is so simple to cook,but please note besan kadhi is loaded with good bacteria, which is healthy for the gut. It helps in maintaining gut flora and improves nutrient absorption. All this, in turn, helps in improving the digestion.Kadhi is also rich in magnesium, which relaxes your muscles and helps in maintaining heart health.So we should always eat food which is not only easy to cook but easy on digestion.It is also found that a cup of kadhi consumed regularly can be beneficial for your skin and hair, as gram flour boosts collagen formation and has anti-inflammatory properties. Be it acne, dark spots or any skin issue.Kadhi is also a recommended diet for pregnant women as it is rich in folate, vitamin B6 and iron and ensures the growth of the baby which reduces the change of miscarriage.Please Note:It is common believe that we should not eat curd at night,but people who are prone to severe cold and cough should avoid eating curd at night.

Ingredients
  

Kadhi Tadka

  • 2 tbsp Ghee or Clarified Butter
  • 1 tsp Cumin
  • 2 pcs Green Chilli Slit
  • 7-8 Curry Leaves

Kadhi

  • 2 tbsp Gram Flour/Besan atta
  • 1 cup Yogurt
  • 1 cup Water
  • 2 cup Buttermilk (little sour)
  • 1 inch Ginger (grated)
  • 3 cloves Garlic (grated)
  • 1 tsp Cumin Powder
  • 2 tsp Sugar
  • ¼ cup Fresh Coriander (chopped)
  • Salt to taste

Instructions
 

Step 1

  • In a bowl add besan, yogurt whisk it properly so that no lumps are formed, add water and buttermilk.

Step 2

  • Take a small pan and keep it on a medium flame add ghee,allow it to melt.Add cumin let it splutter for sometime make sure you don't burn the cumin(brown colour is just fine), green chilli, curry leaves and spread this tadka over the besan,yogurt misture prepared in a seperate bowl.Add salt and sugar accordingly bring to a boil. keep stirring so that it doesn't form lumps.Finally garnish it with chopped coriander and serve hot with khichdi/matki sprouts, roti and steamed rice.

Notes

When you boil kadhi do not keep flame high your kadhi will just curdle,kadhi consistency is important so make sure you add water required.Too thick is also not good and too watery will also not go with this recipe.
