Cream of Mushroom Soup
Homemade Cream of mushroom soup is a simple type of soup with cream or milk and then mushrooms and/or mushroom broth are added. It is well known in North America as a common type of condensed canned soup. Cream of mushroom soup is often used as a base ingredient in casseroles and comfort foods.This Soup is full flavoured and so easy to make, you won't buy soup in a can again!
Ingredients
- 1 packet White Button Mushrooms
- 1 tbsp Butter
- ⅓ cup Fresh Cream
- 1 bowl Milk
- 1 cup Water
- ¼ tsp Red Chilli Flakes
- 1 tsp Olive Oil
- 2 tbsp Fresh Parsley (leaves chopped)
- 1 Onion (thinly sliced)
- 7-8 cloves Garlic
- ¼ tsp Black Pepper Powder
- Salt to Taste
Instructions
Step 1
- Rinse or wipe dry 200 to 250 grams of white button mushrooms.Finely chop two button mushrooms and keep it separately.
Step 2
- In a deep bottom pan add olive oil and whole garlic,sliced onions and saute it on a medium flame for a minute.Then add dry red chilli flakes.
Step 3
- Slice of the lower part of the base stalk of remaining mushroom. Then chop them in halves or quarters. You can even slice them.Then add into the pot allow it to cook for few minutes until mushroom softens down.
Step 4
- Add finely chopped fresh parsley and give a mix.Saute it for 2-3 minutes and take it out in bowl and allow it to cool.
Step 5
- Take a mixture grinder and add cool down sauteed mushrooms to it along with cold milk.Grind it into a smooth paste.
Step 6
- Strain the smooth paste along with the water using a colander.
Step 7
- Heat a heavy saucepan or pan. Keep the flame to a low or medium-low. Melt 1 tablespoons of butter (salted or unsalted) in the pan.Add finely chopped mushrooms saute it and pour the strained mushroom mixture into it.Consistency of the soup should be flowy.
Step 8
- Seasoned it with salt and pepper add cream and stir it continuously for few minutes.Serve hot with soup sticks.
